Hardiesmill is a family owned food-producer in the Borders of Scotland producing reportedly some of the best beef available. It's Scotch, pedigree Aberdeen Angus and pasture-reared. Certainly it is distinctive for the flavour the complexity of flavour, longevity of taste, tenderness and juiciness, which we find carries forward into our charcuterie.
